Tasting Notes: Hokus Pokus’ Stellum Perseus Single Barrel Pick

Stellum’s Perseus Single Barrel is a 2022 release of Stellum Single Barrel, and has the same low rye mashbill from MGP as Lyra and Vega of 2021. This one is 116.34 proof.

Color is a nice amber; I would guess this bourbon was aged in a cooler part of the warehouse for five to six years. Really thick film and legs on the swirl. The nose is a wonderful balance of vanilla and caramel with a hint of oak. The whiskey has a rich mouthfeel on the palate, with flavors of vanilla, juicy fruit gum, and bright oak. On the finish, the juicy fruit gum and oak linger and linger.

This is a delightful whiskey made by Joe Beatrice of Barrell fame. In some of his Barrell releases, there would be some MGP whiskey in the blend that would have these notes. A really nice barrel pick.
